INTRODUCTION…                                                                                             


                          

I would like to tell you about the delicious Mexican gastronomy that is a heritage resulting from many years of work and love passed down from generation to generation in the country. 


Going from Mesoamerican, pre-Hispanic, and Aztec gastronomy… Up to contemporary Mexican cuisine influenced by many cultures and regions, causing gastronomy to change over the centuries.

In 2010, Mexican gastronomy was declared Intangible Cultural Heritage of Humanity by UNESCO. 





DEVELOPMENT…


In the first place, we have that Mexico is the richest country in natural resources and as a result a great variety of fruits, vegetables, fish, shellfish and meat of great quality.

Finally, … we have the most famous star Mexican dish in the world

 . Who doesn't know it? 


I'm talking about the delicious tacos: a tortilla made of corn or wheat flour plus some stew or food inside, accompanied by a rich sauce or other ingredient.


The delicious tacos have many variants such as pastor, carnitas, longaniza, suckling pig, barbecue, birria, roast beef, chicken, chili, nopal with cheese, grasshoppers, avocado, among others.


CONCLUSION... 


In short, I tell you that it is believed that the taco was born as the basis of an Olmec diet thanks to the first traces of nixtamalized corn.

Mexico has very old products such as corn, beans, chili, nopal, avocado that continue to give life to delicious dishes.

In the desserts, the cocadas, the covered fruits, the sapodilla with cinnamon and wine and xoconostles stuffed with coconut, the wafers, the palanquetas, etc. also stand out.


This investigation has been very complicated because it leads you to remember every moment you spent with family or friends tasting a delicious dish, whetting your appetite and having mixed feelings.

I am very fortunate to be the daughter of a Mexican mother and two grandmothers who love cooking and its dishes. I want to dedicate this research to my most beloved woman who made it possible for me to enter the wonderful art of gastronomy. 

I share my experience as a Mexican entrepreneur, and bringing people the delights of China, 100% Mexican.
